Glad you got the drains working. Open the front doors and clean out leaves etc at the bottom, it might be diverting the water inside. Use toilet paper to detect where the water is coming from; lay it gently anywhere there might be a source.
Does look like coolant leak. After fixing your leak, you might consider flushing the system and replacing the fluid if it has been about 5 years since last flush.

Modern cars have fans independent of the engine, meaning that it can come on at any time after the engine is shut off. It is electric and controlled by temperature. Used to be they were controlled by a belt; always be wary of the fan when working on modern engines. Did you ever find the problem?
Off is irrelevant. Automatics should be left in Park. Standard transmission vehicles should be left in the lowest gear, usually low or reverse. IIRC the Equinox for 2019 warns you if you fail to leave in park. Better for any incline to take the pressure off transmission and use parking brake.

Normally, you switch to 2-wheel drive when towing. At least that is what I've read and did that on my Chevy Avalanche and Cadillac Escalade.

Have you checked the connection of the air filter system for misconnection? Filter too dirty etc.
Also, does it "resonate" at 3,000 RPM in all gears. Could be exhaust system loose somewhere underneath.
